Thai nuts and coconut

Nancy Russman, who helped organize the food vendors for WorldFest, offered this Thai street food treat. She said in Thailand vendors serve this mixture in cones made from newspaper.

· 1-2 tablespoons peanut oil or other neutral oil
· 2-3 tablespoons honey
· 2 cups cashews or peanuts (both raw, or roasted and salted will work)
· 1 1/3 cups unsweetened flaked coconut
· 1 fresh red or green chili, such as jalapeno or Serrano, seeded and diced
 
 

Heat oil in sauté pan or skillet. Add honey and stir to combine. Add the nuts and coconut and stir-fry until both are golden brown (watch so it doesn’t burn). Remove from heat and add the chili and salt and pepper to taste. Toss well. Serve either warm or cooled.  Makes 8 to 10 snack-sized servings.
